Chocolate and wine can be notoriously difficult to pair, so this is your chance to find combinations you enjoy. Lauren Adler, Chocolopolis’ Chief Chocophile, will choose the chocolate bars based on the flavor profiles she expects might pair well with the wines, as well as a few wild cards. The wines will be chosen by Richard to create the pairings. We’ll be tasting single-origin and blend chocolates made in small batches from fine flavor cacao. Much like wine, the flavor profiles of the chocolate depend upon the origin of the cacao and how the cacao beans were fermented.
